Spring energy and sprint!

In this season, in which the body is more sensitive, the Vecchia Osteria offers dishes based on seasonal fresh products. Gianluigi and Roberta propose their ravioli with wild herbs filling, sheep-milk ricotta, new broad beans with exquisite fresh pecorino cheese, asparagus. Finally this is the time goats-milk cheeses returns in the menu as well as many other delights of Tuscany.

Starters

Spring starters enhance the quality of local products, including the famous Cinta pork, renowned in the province of Siena. Back on the table fresh pecorino, available now, in the season of lambs.

Second courses

Spring is the new meat season with lambs and veal in the first position: it ia the long culinary tradition, even in Tuscany. The beef, which is also typical of the area is available in its best pieces to be "stracotto", grilled or served as the most professional recepies highlight when it is the famous T-bone Fiorentina.

Side dishes and vegetables

Ricotta flanAccording to the seasonality of products, the Vecchia Osteria offers the possibility to compose vegetarian dishes and to combine different types of vegetables. Diced vegetables, cannellini beans, mushrooms are very good side dishes to pair with second courses.

Salads
